Local foods
Bastion executive chef Kenny Ngubane is determined to prove that local is lekker. For many years, he says, local restaurants have been subject to kitchen colonialism, where foreign cooks ran kitchens and their own native food dominated menus.

The result? Eighty percent of the food that restaurants offered was foreign, while just 20 percent was South African.

"Local cooking is very important, but we are so into international cooking", says Ngubane. "When people come to South Africa, they want South African food, but yet we don't give to them - we give them a dish like crab thermidor that they can have in their own countries.

"When we go China we want to eat noodles. When we go to India we want to eat rice. When visitors come to South Africa, they want South African food."

Bastion fans need not fear: their crab thermidor won't be replaced with chakalaka, pap or morogo. But more local foods are being featured on the restaurant's menu. "A lot of South African chefs are starting to cook more local foods. I think that people are realising that we are losing our culture", says Ngubane.

Head there now and you can dig into Ulundi Ndlovu's Chicken, made with popular chakalaka, a meal Ngubane named after one of his 22 sous-chefs who excelled in the kitchen. Or bite into a Vrystaat fillet served with mielies on the cob, done true Boere style. Or there is Simonsberg sirloin marinated in a blend of Cape wines, served with Simonsberg brie cheese or a slice of Mpumalanga venison.

But Ngubane is firm about one much-loved indigenous dish that won't appear on the Bastion's menu anytime soon - tripe. "We don't do tripe. That will chase people away!" laughs Ngubane.

"I think that it's important when introducing more local foods that you also have to look at the type of establishment and the standard it has. I think it must be phased in slowly, not just with a boom! If I'm doing an African menu, I will introduce it slowly - kind of like the way our democracy came into being."

The days of boycotting Sun City are long gone, and while the country strives to alleviate poverty, it also supports ever growing industries and attractions for travelers and studen
ts who are looking for leisure-time diversions or are socially conscious—or both.

The Top 10: What to Do in South Africa
1. Apartheid Museum: The motto of this Johannesburg-based museum is “A history forgotten is a future lost,” and the Apartheid Museum works to keep that loss from happening. Devoted to the 20th-century history of South Africa, the exhibits include celebrations of both male and female political activists through photography and film, as well as representations of apartheid—among them a series of cages in which hang blown-up pictures of the “pass books” that blacks had to carry before traveling out of segregated areas.
2. Kruger National Park: Located in the far northeast corner of South Africa, Kruger National Park covers over 7,000 square miles and is home to over 1,000 different species of plants and animals. It is also one of the oldest parks in Africa, dating back, under various names, to 1898. The extensive tourism facilities available at Kruger offer visitors the chance to experience the Park by foot, by bike, or by vehicle, and there are almost 40 camps or lodges available for travelers who wish to spend the night.
3. Table Mountain: Cable cars, check. Amazing views, check. From the top of Table Mountain, many of Cape Town’s most celebrated landmarks can be seen, including Robben Island, Lion’s Head, and Signal Hill. Flora and fauna flourish in this area, and people with an outdoorsy inclination can go hiking and cave exploring, too. Just be sure to bring layers of clothing, as the weather can change quickly. Travel with a guide or a group if possible.
4. Robben Island: Located off the coast of Cape Town, Robben Island is perhaps best known as the imprisonment site of Nelson Mandela, Jacob Zuma, and many other political leaders during the apartheid era.
5. Western Cape Winelands: You like wine? As far as new-world wines go, South Africa is topping many lists these days as a destination for wine lovers who wish to retreat and sip something good. Plenty of vineyards on the Cape offer or are located near accommodations worthy of a memorable holiday escape. Some local vineyards are in Cape Town, Wellington, Constantia, Franschhoek, Stellenbosch, and Paarl.
6. Soweto and the Hector Pieterson Museum: Located in Gauteng, the urban area of Soweto has historically been, and still is, a predominantly black community. The area is best known in recent times as the site of the tragic Soweto Uprising of 1976, during which protesters were killed while speaking against an educational policy that required classes to be taught in Afrikaans, the language associated with apartheid, rather than in individual groups’ own languages. On June 16, the first day of the riots, a 12-year-old boy named Hector Pieterson was shot, and a photograph of his body being carried by an older teenager hit newspapers and magazines. In 2002 the Hector Pieterson Museum was established in Orlando West, honoring Pierson's passing and the work of the protesters and the Soweto community during those riots.
7. Garden Route: The Garden Route is a 200-kilometer long stretch of South Africa's southeastern coast, named for its incredible diversity of flora and fauna. The Route provides easy access to golf courses and national parks as well as some more extreme activities like bungee jumping and cage diving with great white sharks.
8. District Six: Apartheid had an extremely strong hold on this section of Cape Town; it was the site of the forced removal of tens of thousands of black and immigrant residents during the 1970s. The area was long prohibited from undergoing any new development after the forced removals, until the fall of apartheid in 1994. The District Six Museum opened in December of 1994 as a memorial to this demolished, and now rebuilding, community.
9. Cape Point: Within the Table Mountain National Park sits Cape Point, located directly east of the Cape of Good Hope and overlooking the spectacular views of the junction between the Atlantic Ocean and False Bay. A cable car takes visitors to a lighthouse where the views can best be savored; whale- and bird-watching are also popular pastimes here.
10. Umhlanga Rocks: Don't let the harsh name fool you; Umhlanga Rocks is a sandy and welcoming seaside town located north of Durban on the Indian Ocean. As one of the most popular resort cities in southern Africa, Umhlanga Rocks offers up a huge variety of tourist-friendly activities and accomodations. There are luxurious hotels and golf courses as well as opportunities for surfing, SCUBA diving, deep-sea fishing, and whale watching.

When to Go
South Africa is a country of many climates, and the weather varies according to an area’s proximity to coasts or elevated lands. Generally speaking, the winter season in Gauteng lasts from June to September; summer lasts from October to May. In Cape Town, summer begins later, usually around November or December. Heavy rains arrive during the summertime in Johannesburg, and temperatures can fluctuate in the winter between autumnal and freezing. Cape Town, on the other hand, enjoys a Mediterranean climate with winter rains and dry summers. Keep an eye on the forecasts a week before you leave, and pack appropriately.
If you’re looking to enjoy food, music, or other arts in group settings, then checking out a calendar of festivals is an excellent way to plan an itinerary. 2- The Winelands

3- Knysna
Knysna is a town in the heart of South Africa's beautiful Garden Route. Knysna lies nestled in between the Outeniqua Mountains and the Indian Ocean. Knysna has twice been voted South Africa's favorite town, and with good reason; it's a friendly and welcoming with lots of attractions and activities. There's a large lagoon that's perfect for water sports and surrounding forests that are great for walking.
Because Knysna is such a popular destination for South Africans, avoid it during the summer school holidays in mid-December to early January when it gets very crowded and prices double.

4- Kruger National Park
Kruger National Park is Africa's oldest established wildlife park (1898) and offers one of the best safari experiences in Africa. It's situated north of Johannesburg and takes about 5 hours to get to by car. It boasts the highest variety of wildlife in Africa which inlcudes the "Big Five", hippos, crocodiles, giraffe, cheetah and much more. Kruger is also one of the best maintained parks in Africa. The roads are all good quality and there's no need to rent a 4x4 vehicle. There's wheelchair accessibility at most lodges and specialized safari vehicles for those with mobility impairments.

5- Soweto
Soweto may not be the most beautiful place you visit in South Africa, but it certainly ranks among one of the most important and interesting sights in the country. Soweto is a sprawling township situated just outside of Johannesburg and over 3.5 million people call it home. Much of the struggle against Apartheid played out in the slums of Soweto, and the township was in a virtual state of war during the 1970's and 80's. Nowadays, Soweto is a mixture of rich suburbs and poor shanty dwellings where crime is rife. But Soweto is also home to some of the most vibrant music and theatre South Africa has to offer.
When you visit Soweto it's certainly worth taking a tour. Not just because it may be the safest way to see the township, but because the history of Soweto is what makes it so interesting. Soweto also covers a huge swath of land, over 90 square miles, so it's easy to get lost.

6- Durban
Durban is situated in the province of KwaZulu Natal, on the east coast of the South Africa. The city is set on Natal Bay and benefits from year-round warm waters making it one of South Africa's top vacation spots. Durban is also one of Africa's busiest and most important ports.

The Beaches
Durban's "Golden Mile is a string of beaches protected from sharks by nets and patrolled by life guards during the day. This is prime surfing territory but there's room for swimmers and body-surfers too.

A promenade stretches along the Durban waterfront and is home to numerous restaurants, pubs, hotels, shops and the world class uShaka Marine World aquarium.

Victoria Indian Street Market
Durban has a huge Indian population, descendents of laborers brought in by the British to work in the sugarcane fields during the latter 19th century (one of which was a young Mohandas Gandhi). The Indian street market is a bustling interesting place with mosques and temples as well as plenty of shops and delicious food.
Umgeni River Bird Park: With over 3000 exotic and indigenous birds as well as 4 waterfalls, lush vegetation and several endangered species, this bird park is a wonderful place to visit.
Note: Durban has always been a fairly crime-ridden city. You should be aware of pickpockets in the market areas and along the promenade, and be careful at night.

7- Drakensburg Mountains
The Drakensburg Mountains stretch the entire length of KwaZulu-Natal's western boundary, about 600 miles. You can enjoy hiking trails, bird watching, game viewing, horse trails and safaris, guided tours, 4x4 trails, quad bikes, golfing, trout fishing, white water rafting, rock climbing and more.
Highlights of the Drakensberg Area include
The Karkloof Canopy Tour is a unique eco-wilderness adventure in the Karkloof indigenous forest of South Africa. The canopy tour involves traversing from one platform to another along a steel cable suspended up to 30 meters above the forest floor. The scenery and bird life is spectacular and professional guides provide interesting facts about the forest ecology during the three-hour tour.
Bushman Rock Art: The San bushmen were the original inhabitants of the Drakensberg mountains and they left behind the most beautiful paintings in caves throughout the region. Some of the best examples of Bushman rock painting in South Africa can be found in Kamberg National Park.
Royal Natl National Park: Encompassing one of the most beautiful parts of the Drakensberg, the Royal Natal is perfect for those who enjoy hiking, rock climbing and horseback riding. One of the highest mountains in the Drakensberg is the Mont-aux-Sources which is the source of five rivers and includes the stunning Tugela Falls which fall over 3000 feet and tumbles over 5 separate tiers.

8- Hogsback
Situated in the Amatola Mountains, Hogsback is a magical place said to have inspired Tolkien (who was born in South Africa) when he wrote Lord of the Rings. The landscape is lush, green and dotted with waterfalls and streams to swim in. Indigenous forests play host to parrots and louries among many other species of birds. Hogsback is ideal for those who enjoy walking, trout fishing and horse riding. Trails are well marked throughout the area.

9- Hermanus
Hermanus lies on the Western Cape (2 hours from Cape Town) close to the most southerly point in Africa. Hermanus is a major tourist destination in South Africa because it's simply the best place in the world to watch whales from and in particular, the Southern Right Whale. The peak times to see the Southern Right Whale is from August to November. During this time you can see the whales every day from a cliff path which stretches from one side of Hermanus to the other.
Hermanus is a popular seaside town with South African vacationers but it still retains an air of the small fishing village it once was. There are lots of established festival and events throughout the year to keep the town buzzing. Besides whale-watching, you can go on a township tour, sea-kayaking, wine-tasting and even cage diving with Great White Sharks on nearby Dyer island.
